Vegan Glazed Donuts

I don’t know why but I have been craving donuts, and since there isn’t anywhere near me that sells vegan donuts, if I want donuts, I have to make them myself. I decided to make glazed yeast donuts and they were so yummy, especially when they were still warm. I won’t tell you how many I ate (far too many), but I can tell you that my donut craving was satisfied and it will be a while before I want to stuff my face with them 🙂

Ingredients

Donuts

1 package dry active yeast
1/4 cup warm water (100° F)
1 teaspoon sugar
3/4 cup warm soy milk (100° F)
2 tablespoons vegan margarine (softened)
1/4 cup unsweetened applesauce
2 1/4 cups all purpose flour
1 tablespoon sugar
1/8 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Vegetable oil for frying (3-4 cups)

Glaze

1 cup icing (powdered) sugar
2 tablespoons melted vegan margarine
2 tablespoons water
1 teaspoon vanilla

Directions

Stir yeast into 1/4 cup warm water. Add 1 teaspoon of sugar and set aside for 10 minutes.

Pour the yeast mixture into the bowl of an electric mixer (or large bowl if mixing by hand). Add the warm soy milk, margarine, applesauce, flour, 1 tablespoon sugar, cinnamon and nutmeg. Using a dough hook, mix on low speed for 2-3 minutes (or by hand for 5 minutes), until everything is thoroughly mixed in and the dough is elasticy. Cover the bowl with a tea towel and let rise for 1 hour.

Once the dough has risen, turn it out onto a lightly floured surface and roll out to 1/4″ thick and cut into rings with a donut cutter or a large round cookie cutter (I used a 3″ cookie cutter) or something of equivalent size like a coffee mug. Then cut out the center holes with a very small round cookie cutter (1″ cookie cutter) or something of equivalent size. Gather up the holes and left over dough and roll out again, and cut out more donuts until all the dough has been used.

Place the cut donuts onto a baking sheet lined with parchment paper, cover with a tea towel and set aside to rise for 30 minutes.

Once the donuts have risen, pour oil in a large high sided skillet, so that it is 1/2″ deep. Heat oil to 365°F.

While the oil is heating, make the glaze. Place the icing sugar in a bowl, add the water and vanilla. Whisk the melted margarine in and continue to whisk for 1-2 minutes. Set aside until the donuts are ready.

When the oil is properly heated, gently drop 3-4 donuts in at a time, fry until bottoms turn brown (20-30 seconds) then use tongs to flip and brown the other side (20-30 seconds). Remove from the oil and place on paper towel. Continue frying donuts until they are all done.

Once all the donuts are cooked, and still warm – not hot, dip one side in glaze and place on a wire cooling rack so that the glaze can drip down. Place parchment paper or foil under the cooling racks for easier cleanup.

Makes about 20 (3″) donuts.
