I had some left over baked potatoes from the night before, so I decided to chop them up and make some home fries with them. Since home fries are more of a breakfast food, I stuck with the theme and made tofu scramble. I used my usual tofu scramble mixture and added some dried dill and parsley. I also cut up some Tofurky smoky maple tempeh bacon, browned it and added it to the scramble.
