1 Pkg Veggie Chicken or Beef Strips
1 Red Pepper (cut into strips)
1 Yellow Pepper (cut into strips)
8 oz mushrooms quartered
1 Large Zucchini (cut into strips)
1 Large Onion (cut into large chunks)
1 Pkg Store Bought Fajita Mix
Vegan Sour Cream, Lettuce and Tomatoes
Cook veggie chicken or beef according to package instructions. Set aside.
In a large frying pan add a touch of olive oil and saute onions for about 4mins. Add the other vegetables and continue to cook until tender. Add the veggie chicken or beef and stir in the fajita mix along with 1/3 cup of water. Mix well.
Serve on soft tortillas with shredded lettuce, tomatoes and vegan sour cream.
