Vegan Caramel Corn Recipe

The Summer movie season will soon get into full swing, and since there aren’t many vegan options, beyond basic popcorn, available at movie theaters, I often like to bring my own snacks. Wether enjoying at the movies or at home, this caramel corn recipe is easy to make and will impress everyone you make it for.

Ingredients

1 cup Earth Balance Vegan Buttery Sticks or other vegan margarine
2 cups demerara or brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
18 cups popped popcorn (3/4 cup popcorn kernels)

Directions

Divide the popcorn between 2 large bowls. Preheat oven to 250°F. Line 2 baking sheets with parchment paper and set aside.

Melt the margarine in a large saucepan over medium heat. Stir in the sugar, corn syrup and salt. Bring the mixture to a boil, stirring constantly. Once it starts to boil, stop stirring and boil for 4 minutes. Remove from the heat, add the vanilla and baking soda and stir.

Pour evenly over the 2 bowls of popcorn and stir well to coat. Spread the coated corn onto the prepared baking sheets. Bake for 1 hour, stirring the popcorn every 15 minutes.Remove and let cool completely then break up into pieces.
