Vegan Bubblegum Ice Cream Recipe

Many thanks to Kim W. for sending me this recipe. She says it tastes exactly how she remembers bubble gum ice cream tasting.

It sounds yummy, but I don’t have an ice cream maker so I can’t try it 🙁
But for those that do have ice cream machines, this is the perfect thing to make on a hot Summer day.

Ingredients

4 cartons Belsoy Soy Cream
1 cup organic sugar
2 packages B-Fresh vegan bubblegum
Blue food coloring (optional)
¼ teaspoon xanthan gum

Directions

Heat the soy cream, sugar, and cut up pieces of bubblegum for approximately 10min-20min over med-low heat. Stir often.

Add the xanthan gum and the blue food coloring until desired colour is reached. Continue stirring for 10 minutes.

Strain the mixture through a fine mesh sieve with a piece of cheesecloth in it. Cool the mixture in the freezer. Add to ice cream machine.
