Smoothies are regularly part of my afternoon routine. Usually by three of four I need a pick me up and I find a fruit or veggie packed smoothie can be the perfect remedy to my energy lag. Lately this has been my go to green smoothie. I love the combination of cucumber, melon, spinach, and mint and the almond milk adds some needed protein. If you wanted to add even more protein, a few scoops of plant based protein powder could be a great addition.

Cucumber Mint Smoothie
- 1.5 cups English cucumber, chopped
- 1 cup cantaloupe or honeydew melon, chopped
- 2 cups spinach
- 1 green apple
- 1 cup unsweetened almond milk
- Blend until smooth.
