Jalapeno Kale Waldorf Salad

I have always loved Waldorf salads and especially when they are made with kale. This version though recently has really stolen my heart. Sweet and spicy with the addition of a jalapeno to the dressing, it makes a perfect meal or side dish. The sweet crispy apples, raisins, spicy nutty dressing, and dark greens make a delicious and unexpected combination.

Creamy Cauliflower Soup


  • 1 bunch black kale
  • 1/4 cup raisins
  • 1/2 cup rinsed and drained black beans
  • 2 sliced apples, divided
  • 2 stalks diced celery
  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • 1/4 cup walnuts
  • Up to 1 jalapeno, seeded
  • 1 + tbsp. water
  • Salt and pepper to taste

Cooking Directions

  1. Add 1 apple, olive oil, vinegar, walnuts, the jalapeno, and water to a blender. Blend until smooth, adding water as needed. Season with salt and pepper. Add the jalapeno slowly and taste throughout to get the right spice level. This makes the dressing.
  2. Toss with remaining ingredients.
