What’s For Dinner? Big Salad with BBQ Tofu


After devouring far too many vegan glazed donuts yesterday afternoon, I wanted to have a veggie rich dinner. I made a big salad that had Romain lettuce, corn, mandarins, cucumber, tomato, shredded carrot, sunflower seeds, barbecued tofu and topped it off with Renee’s poppyseed dressing.
