Preheat oven at 350F.
½ cup organic earth balance (vegan butter)
¾ cup organic cane sugar
Blend with a hand-mixer for 2-5 minutes until creamy in texture.
Add 4 Bananas
Grind 2 Tbsp Chia Seed in a coffee grinder.
Add 7 Tbsp Water to Chia and stir in a bowl.
Set aside for 10 minutes.
Mix all dry ingredients in a separate bowl:
– 1 cup brown rice flour
– ¾ cup Tapioca Flour
– 1 tsp xanthan gum
– 2 tsp baking powder
– ½ tsp sea salt
– 3 Tbsp Cocoa Powder
Blend Chia mixture to the wet ingredients.
Stir in the dry ingredients until smooth.
Add ½ cup chopped walnuts, ½ cup chocolate chips (optional).
Grease a baking dish with ½ tsp coconut oil.
Pour mixture into baking dish and spread evenly.
Bake for 1 hr at 350 F.
Turn off oven and allow to bake for an additional 10 minutes.
Remove and cool for 30 minutes.
