Baked Squash Stuffed with Beans

I love simple, one dish meals, that I can put together in just a few minutes and then throw in the oven. This easy delicious baked squash is one of those. Stuff the squash with your favorite canned beans, chopped onions and tomatoes, and some spices. Then bake it for around 35 minutes in the oven for a hearty and warm meal perfect for a cool night. Normally when I make these I like to make them in advance and then just place them in the oven when I need a quick meal. They also freeze well, so you can keep some frozen in the fridge. You just need to adjust the cooking time so they come out fully cooked.

Ingredients

2 patty pan/acorn/pie pumpkin squash
1 can black beans – drained and rinsed
1/4 cup olive oil
2 cloves minced garlic
1/4 cup chopped red onion
1 chopped tomato
1 tsp cayenne powder,
1 tsp black pepper,
4 tbsp nutritional yeast
1 tsp sea salt
1 tsp balsamic vinegar or juice of 1/4 lemon

Directions

Hollow out (remove seeds & pulp) the squash. Mix all the other ingredients together and fill the squash with the mixture.

Bake at 400°F for 35-45 minutes or until you can pierce the squash easily with a fork.
