Vegan Romesco Sauce

Ever since living in Spain during college, I have had a love affair with Romesco sauce. Packed with the delicious flavors of roasted red peppers, garlic, almonds, and a touch of tomato – it makes the perfect sauce for vegetables, pasta, and it a great addition to sandwiches or veggie burgers. I also love to use it as an alternative to pesto when I am looking for a different flavor profile. If you love spice, consider adding a pinch of cayenne pepper, red pepper flakes, or even a chipotle pepper.

Vegan Romesco Sauce

Ingredients

  • 4 roasted red pepper
  • 1 tbsp.tomato paste
  • 1/2 cup almonds
  • 2 cloves garlic
  • 2 tbsp.balsamic or sherry vinegar
  • 1/2 tbsp.lemon juice
  • 2 tbsp. water
  • 2 tbsp.olive oil
  • 1 tsp. smoked paprika
  • 1/4 cup parsley
  • 1 tbsp. chopped parsley

Cooking Directions

  1. Add everything to a food processor and pulse until well combined.
