Banana Bread

1/2 Cup Vegan Margarine*

3/4 Cup Demerera or Brown Sugar

Equivalent of 2 Eggs Using Egg Replacer

2 Cups Flour

1 Tsp Baking Powder

1/2 Cup Soy Milk

2 Ripe Bananas Mashed

*Note: Some margarines contain animal products such as whey, milk ingredients and animal fat. Please keep this in mind when shopping.

Cream margarine and sugar very well. Add egg replacer mixture, and beat well again.Sift dry ingredients together and add to creamed mixture alternately with the soy milk. Fold in mashed bananas.

Pour into a greased loaf pan, and bake at 350° for 1 hr.
